Tapping the Trees

The process begins in late winter or early spring, when the sap begins to flow in maple trees. Tapping the trees involves drilling a small hole into the trunk and inserting a spout or spile. The sap then drips into a collection container, which is typically a bucket or plastic tubing system. It takes about 40 gallons of sap to produce just one gallon of maple syrup!

Boiling the Sap

Once the sap is collected, it must be boiled to remove the excess water and concentrate the sugars. The sap is transferred to large evaporator pans, where it is heated over a fire. As the water evaporates, the sap becomes thicker and sweeter. This boiling process can take several hours, and the syrup is carefully monitored to ensure it reaches the desired consistency and flavor.

Filtering and Packaging

After the syrup reaches the desired consistency, it is filtered to remove any impurities or sediment. This step ensures that the final product is smooth and clear. The syrup is then carefully packaged into bottles or containers, ready to be enjoyed on pancakes, waffles, or desserts.

Grading and Quality

Maple syrup is graded based on its color and flavor profile. The grades include Golden, Amber, Dark, and Very Dark. Each grade has its own distinctive taste and can be used in a variety of culinary applications — and we carry each grade of maple syrup in our online store!
